The Gilded Fir is where we go to check whether a spec survives a Friday rush, and it does. A bartender in a green dinner jacket hands over this week's Merry Hour drink built the way it was written — properly chilled, properly diluted, the garnish standing up straight — and then talks you through the two other drinks on the card without being asked. Nothing about the room is dressed up for December; the reason to come is that the exclusive menu is poured better here than anywhere else in the city.
